HUEVOS RANCHEROS


Huevos Rancheros (and Mexican) is always a good idea. High in protein, low in carbs and you're tastebuds will be so stoked with you! Basically if you've never come across this legendary dish - it's homemade beans with baked egg with fresh Mexican ingredients, which makes it totally OK to have coriander for breakfast. You can get as creative as you want with the beans - adding, chorizo, bacon, kale, butter beans or any other beans you fancy. Oh FYI fresh guacamole and a spoonful of greek yoghurt on the top go SO good too! Here's what I whipped up this morning is around 20mins! It was gone in about 3mins flat. Whoops.

Ingredients

1 can of chopped tomatoes (you can def use fresh) 1 can of kidney beans half a diced red onion 2 garlic cloves some chilli flakes 2 eggs

1 tablespoon of olive oil

fresh lime juice and coriander to garnish

Method

- Whack oven on to 180deg - Brown onions and garlic with olive oil, add canned tomatoes and beans, simmer for 5-10mins. Put into an oven safe dish - Gently crack your eggs on top, then put in the oven for 10mins - watch you don't overdo the eggs (that'd be a proper fail.
