Kitchari is an ancient Ayurvedic healing dish, loaded with the perfect balance of spices to balance all dosha types and is loaded with grains which are super easy to digest.

Kitchari is a dish made of split mung beans, bastmati rice and the perfect balance of spices. Basmati rice and mung dal together create a balanced food that is a good protein combination and is tridoshic (Ayurveda has three 'doshas' or 'body types' which take in consideration your personality, your environment & habits. INGREDIENTS

Serves 6

  • 1 cup of yellow mung dal

  • 1 cup of quinoa (or more traditionally basmati rice)

  • ½ cup of split mung beans

  • 2 Tbsp of ghee

  • 4 cardamom pods

  • 2 sweet potatoes (optional)

  • 5 cups of water (or more)

  • 1 tsp black pepper

  • 1 tsp sea salt

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp ground ginger

  • 2 tsp fennel seeds

  • 2 tsp black mustard seeds

  • 2 tsp cumin seeds

  • 2 tsp turmeric

  • (option to add in fresh greens like spinach or kale with each serving)

 

METHOD

  1. Rinse and soak mung dal & quinoa overnight

  2. Measure out all spices into a cup

  3. Add ghee / oil into large pot. Add all the spices and sauté on a medium heat until fragrant (careful not to burn!)

  4. Stir in mung dal, quinoa and mung beans

  5. Add water and chopped vege. Bring to the boil, reduce heat and put lid on.

  6. Cook for around 30-40mins, adding more water if needed. Ensure dal and beans are completely soft. You should be able to squish between your fingers easily.

  7. Just before serving add another tablespoon of ghee to add a beautiful shine to your dish.

  8. Serve with coconut yoghurt, green chutney a squeeze of fresh lime and fresh herbs to garnish. Kitchari is the Ayurvedic no.1 detox & cleansing meal. GREEN CHUTNEY

 INGREDIENTS

  • Juice from a lime

  • 1 green chill de-seeded

  • ¼ cup of olive oil

  • a thumb sized piece of fresh ginger

  • a handful of coriander, parsley & mint

  • 1 tsp cumin

  • salt & pepper

 

METHOD

  1. Put all ingredients into a nutria bullet or kitchen whiz until a smooth paste, put into an airtight container. Will keep in the fridge for a around week. Will also freeze
